This big puffy pancake is fun to make and fun to eat for breakfast, brunch or even lunch.

½ cup | all-purpose flour |
½ cup | milk |
¼ tsp | each salt and granulated sugar |
½ cup | shredded Cheddar cheese |
4 | breakfast sausages, cooked and crumbled |
2 | green onions, thinly sliced |
3 Tbsp | butter |
1 pkg | Southeastern Mills® Peppered Gravy with Sausage Flavor Mix |
Preheat oven to 450˚F. Preheat 10-inch cast iron skillet in oven for about 5 minutes or until hot. In blender, mix together eggs, flour, milk, salt and sugar until smooth. Toss together cheese, sausage meat and green onions; set aside.
Add butter to hot pan. Return pan to oven for 30 to 60 seconds or until butter is melted. Working quickly, pour batter into pan; return immediately to oven.
Bake for 15 to 18 minutes or until pancake is puffed and golden. Top with cheese mixture and bake for 1 to 2 minutes or until cheese starts to melt.
Meanwhile, prepare Sausage Flavor Peppered Gravy Mix according to package directions. Cut pancake into 4 slices and serve with gravy.
Add a handful of cherry tomatoes to the pancake if desired.
