Perfect for a quick and easy dinner, this classic shrimp and grits combo is made even better with the addition of rich and creamy gravy.

Ingredients

1 cup white corn grits
¼ cup butter, divided
2 Tbsp lemon juice, divided
½ tsp each salt and pepper, divided
1 onion, diced
2 stalks celery, diced
1 green pepper, diced
2 cloves garlic, minced
1 Tbsp finely chopped fresh thyme
1 lb peeled deveined shrimp, tail removed (21-25 count)
1 pkg Southeastern Mills® Peppered Gravy Mix
4 green onions, thinly sliced

Directions

    Bring 3 1/2 cups water to boil in saucepan. Stir in grits and reduce heat to medium-low. Cover and cook for 20 minutes.

    Increase heat to medium. Uncover and cook, stirring regularly, for about 5 minutes or liquid is absorbed and grits are tender. Remove from heat and stir in 3 Tbsp butter, 1 Tbsp lemon juice and half of the salt and pepper.

    Meanwhile, melt remaining butter in large skillet set over medium-high heat; cook onion, celery, green pepper, garlic, thyme, and remaining salt and pepper for 3 minutes. Stir in shrimp. Cook for 1 to 2 minutes or until curled and cooked through. Stir in remaining lemon juice.

    Prepare Peppered Gravy Mix according to package directions.

    Divide grits among 4 serving dishes. Top with shrimp and vegetables, a heaping spoonful of gravy and green onions. Serve remaining gravy on the side.
