Use leftover pulled pork to make this hearty breakfast – it will keep you fueled all morning long!

1 pkg | Southeastern Mills® Peppered Gravy Mix |
8 | frozen pancakes |
2 cup | pulled pork, warmed |
4 | thinly sliced red onion rounds, separated |
4 | egg, fried |
2 Tbsp | finely chopped fresh parsley |
Prepare Peppered Gravy Mix according to package directions. Reheat pancakes according to package directions.
Divide pancakes among 4 plates. Top with pulled pork, red onion and fried egg. Drizzle each serving with 1/4 cup gravy and sprinkle with parsley.
Substitute Canadian bacon, bacon strips or breakfast sausage for pulled pork. Add remaining gravy to soups or tomato sauce for a creamy finish.
