Slow Cooker Sausage, Potato & Leek Soup

Warm and comforting, this creamy soup is made extra-rich and flavorful with the addition of Sausage Flavor Peppered Gravy.

2 Tbsp butter
8 oz andouille sausage, sliced
3 leeks, sliced (white and light green parts only)
4 tsp finely chopped fresh thyme
2 cloves garlic, minced
¼ tsp each salt and pepper
4 cup reduced-sodium beef broth
1 lb potatoes, chopped
1 pkg Southeastern Mills® Peppered Gravy with Sausage Flavor Mix
Pinch ground cinnamon
Crusty bread

    Melt butter in large skillet set over medium heat; cook sausage, leeks, thyme, garlic, salt and pepper for about 5 minutes or until sausage starts to brown and leeks are tender. Transfer to bowl of slow cooker; stir in beef broth and potatoes.

    Cover and cook on High for about 2 hours and 30 minutes or until potatoes are tender.

    Meanwhile, prepare Sausage Flavor Peppered Gravy according to package directions. Stir into soup along with cinnamon.

    Divide soup among 4 bowls. Serve with crusty bread.

Sprinkle with fresh parsley or chives if desired.
