
Eggs Benedict with Chipotle Cream Sauce

1 cup | half and half |
1 Tbsp | Chipotle in adobo sauce |
2 pkg | Southeastern Mills® Country Gravy Mix |
¼ cup | freshly chopped cilantro |
8 | English muffin halves, toasted |
8 slices | ham or Canadian bacon, seared |
8 | poached eggs |
Add the half and half and the Chipotle in adobo sauce to a blender and blend until smooth.
Add the Country Gravy to a small saucepan over low heat. Whisk in the Chipotle mixture and simmer for 4-5 minutes. Remove the pan from the heat and stir in the cilantro.
To assemble, place 2 toasted English muffin halves onto a plate. Top each half with a slice of ham and a poached egg. Spoon the Chipotle cream sauce over the eggs and serve immediately.
The Chipotle Cream Sauce is delicious served over chicken or pork.
