Eggs Benedict with Chipotle Cream Sauce

|1 cup||half and half|
|1 Tbsp||Chipotle in adobo sauce|
|2 pkg||Southeastern Mills® Country Gravy Mix|
|¼ cup||freshly chopped cilantro|
|8||English muffin halves, toasted|
|8 slices||ham or Canadian bacon, seared|
Add the half and half and the Chipotle in adobo sauce to a blender and blend until smooth.
Add the Country Gravy to a small saucepan over low heat. Whisk in the Chipotle mixture and simmer for 4-5 minutes. Remove the pan from the heat and stir in the cilantro.
To assemble, place 2 toasted English muffin halves onto a plate. Top each half with a slice of ham and a poached egg. Spoon the Chipotle cream sauce over the eggs and serve immediately.
The Chipotle Cream Sauce is delicious served over chicken or pork.
