Serves 6-8

For Cake

• 1 (6-ounce) package Southeastern Mills® Country Biscuit Mix
• 1 egg
• ½ cup granulated sugar
• 2 teaspoons vanilla
• 2 teaspoons ground cinnamon
• ½ cup orange juice
• ½ cup shredded carrots
• ½ cup chopped walnuts

For Frosting

• ½ cup cream cheese, softened
• 1 ½ cups confectioners’ sugar
• 1 tablespoon milk
• 1 teaspoon vanilla

Directions

Cake Directions

1. Preheat oven 350°F. Evenly coat an 8 x 8 light-colored baking pan with non-stick cooking spray.
2. In a medium mixing bowl, whisk to combine egg, sugar and vanilla.
3. Add cinnamon, orange juice, carrots, Country Biscuit Mix and walnuts; gently stir batter.
4. Spread batter into prepared pan. Bake until done, approximately 20-25 minutes.

Frosting Directions

1. With an electric mixer, beat cream cheese, confectioners’ sugar, vanilla and milk, about 2-3 minutes.
2. To adjust the consistency of the frosting, additional confectioners’ sugar will thicken the frosting and additional milk will make a thinner frosting. Frost cake when cooled.
